Tabbouleh is a salad made from fresh herbs, bulgur and other ingredients depending on what the cook wants to put in the salad. Often it is made with cucumbers and tomatoes. This recipe will use cucumbers as well as pomegranate seeds.
100g celery with a little of the green part, diced
1/2 cucumber, diced
1 bunch flat-leafed parsley, finely chopped
1 bunch peppermint, finely chopped
1 organic lemon, use grated zest and juice
3/4tsp salt
a little pepper

Step 1
Cook the bulgur wheat:
Heat the oil in a pan. Add the bulgur wheat, sauté, pour in the water and simmer on low heat for approx. 10min. Remove the pan from the heat, allow to cool a little.

Add the pomegranate and all remaining ingredients. Then mix and season.
