Ingredients
  • 3tbsp olive oil
  • 1tbsp white wine vinegar
  • a little salt and pepper
  • 250g tabbouleh salad with chicken
  • 90g rocket
  • 2 apricots
    sliced
  • 80g ham
    cut into pieces
How To
  • 1
    For the spicy tabbouleh salad:
    Mix oil and vinegar in a bowl and season. Add the tabbouleh salad, rocket and mix.
  • 2
    For the ham crisps:
    Heat the oil in a frying pan, fry the apricots for approx. 2 mins and add to the salad. Fry the ham in the same pan for approx. 4 mins until the pieces are crispy. Drain the oil from the ham by using paper towels and put them on top of the salad.
