Kale Pasta

Kale is found to be one of the healthiest vegetables as it contains many beneficial nutrients such as fiber, antioxidants, calcium, vitamins C and K and iron. Antioxidants help the body to remove any damaging toxins that can damage healthy cells. Futhermore, they are found to be beneficial in preventing diabetes and cancer while fiber can help to regulate the digestive system, keep blood sugar levels low and help prevent heart disease. Additionally, the calcium that is found in Kale is good for maintaining good bone health and the vitamins it contains help with maintaining strong eye sight and healthy skin and hair.

Ingredients
  • 150g kale
  • boiling water
    salted
  • 350g fusili pasta
    (or any other kind works fine too)
  • 50g hazelnuts
  • 200g carrots
  • 1tbsp olive oil
  • 1tsp salt
  • a little pepper
  • 30g dried cranberries
  • 1dl single cream for sauces

    Step 1
    Cook the kale in the boiling water for approx. 4 mins and then drain. Secondly, cook the fusili pasta in salted, boiling water until al dente (not completely soft but they should not be hard in the middle anymore). Drain the pasta.

    Chop the hazelnuts and toast them in a pan without oil. Remove them from the pan.

    Peel long strips from the carrots by using a peeler and sauté them in a pan with olive oil for approx. 2 mins. Add the kale and pasta, then mix and season.

    Add the cranberries and cream, mix and let it cook for a bit (let it heat through).

    Put the kale pasta on plates and sprinkle with hazelnuts.
