Jammy Dodgers

A traditional Swiss biscuit made during the Christmas season. Jammy dodgers are biscuits that have two sides, one usually with cut out shape and the other normal, filled with either raspberry, strawberry or apricot jam.

Ingredients
  • 200g soft butter
  • 125g icing sugar
  • 1/2 tsp vanilla paste
  • a sprinkle of salt
  • 1 fresh egg white
  • 300g white flour
  • 150g jam (either raspberry, strawberry, mixed berries or apricot)
How To
  • 1
    Step 1
    For the dough: Put the butter in a bowl and add sugar, vanilla paste, salt and egg white to the same bowl. Whisk the mixture until smooth and light in color. Mix in the flour and stir well. Cover and chill the dough for approx. 1 hour.

    Roll out the dough until it is 4mm thick. Use half the dough to cut out circles our any type of form with a form cutter.  Use the other half of the dough to cut out the same shapes/forms but with an inner cut out part (see photo above). Place the forms on a tray and leave in fridge for another 30 mins.

    To bake: Bake each tray for approx. 10 mins in the middle of the oven which is preheated to 180 degrees. Remove from oven and let it cool for a bit. Then place the jammy dodgers shapes on a rack and let them cool completely.

    To fill: Stir the jam until it is smooth. Spread the jam on the jammy dodgers bases (the ones that don’t have a hole shape in the middle). Dust the top shapes of the biscuits with icing sugar (the ones that have a cut out shape in the middle) and place them on the halves that are spreaded with jam.
