Ingredients
  • 1tbsp olive oil
  • 1 onion, finely chopped
  • 1 garlic clove, pressed
  • 1 sliced pepper
  • 1 red chilli pepper, deseeded and finely chopped
  • 50g yellow lentils
  • 1 tin of corn, drained
  • 1 tin black beans, drained
  • 1 tin chopped tomatoes (approx. 400g)
  • 1 1/2dl water
  • 1/2tsp salt
  • 1/4tsp paprika
  • 4 eggs
  • 4 wheat tortillas
  • 1 big avocado, sliced
  • 4tbsp crème fraîche
  • 1 lime, rinsed and cut into slices
  • 1/2 bunch of coriander, torn into small slices
How To

    Step 1
    Tomato sauce: Heat oil in a big frying pan. Add onions and garlic and sauté for approx. 3 mins. Add pepper and all other ingredients up until (and including) the water. Season and simmer for approx. 20 mins. Mould 4 holes in the tomato sauce and crack the eggs one after the other into a bowl. Then carefully slide the eggs into the moulds. Cover and let it get solid for approx. 10 mins.

    Step 2
    To serve: Serve eggs and tomato sauce on top of the tortillas. Garnish using the avocado slices, crème fraiche, lime and the coriander pieces. Et voilà, here you have your Huevos Rancheros!

Importance of group work and good communication: At EHL we have many group projects that require us to work together and maintain a good communication flow between the individual group members. Over the past years I have not only learned how important group work is as it can sometimes open new doors and get you further than if you work by yourself, but also the absolute necessity of good communication between group members if you want to make a project work. This is a lesson that I will take with me once I graduate and I am convinced that it is one of the most important takeaways for my future life. Anywhere we go in life, may it be our professional or personal life, we will meet new people. Some of them will only pass by, while others will walk a part of our way with us. This is why the know-how of how to work and communicate with others is paramount. During my internship I was working closely with another intern, more precisely my mentor, with whom I was doing many projects with. Sometimes we encountered difficult moments, usually when we were under time pressure or something went differently than we expected. In these times it is essential to speak openly about arising issues and to make sure that we can rely on one another to do the work we are assigned to do. This is key in team work; communication, reliability, respect and honesty. When you follow these key values I believe that team work is much easier, and lastly is an enjoyable task. Being precise and executing tasks with eye for detail: This goes hand in hand with group work but also individual tasks. I believe this applies to many situations in life but especially to your professional career because you have a corporate responsibility within a company. Making errors in your personal life or doing things with less precision ultimately falls back on you. In a company, however, these things will fall back negatively on the company and coworkers too. For this reason, it is even more important to do things with the utmost attention and in a precise manner so that you do not have to correct any errors that may occur as a consequence. During my internship it was vital for me to do my work carefully, especially when it came to setting up the website and designing the pages. If you do not pay attention you are likely to make a mistake that you will repeat on many other pages which will lead to many more hours of work if you need to correct the mistakes you made on each page.
