Ever seen the iconic Popeye inhale spinach in one go? Well they actually forgot to illustrate that he mixed his spinach with dal to  become that strong. Our dal with spinach is the perfect recipe for a healthy and tasty diet. Either as a main course or starter, you decide the portion size!

Ingredients
  • 1/2tbsp olive oil
  • 120g red lentils
  • 2tbsp yellow curry paste
  • 1dl coconut milk
  • 2dl water
  • 1/2tsp salt
  • 200g leaf spinach
How To
  • 1
    For the dal soup:
    Heat the oil in a pan. Add the red lentils and the yellow curry paste and cook for approx. 3 mins. Add the coconut milk and water and season with salt. Simmer the content for approx. 15 mins, stirring occasionally. Then, add the spinach and simmer for another 5 mins. Et voilà!

    To serve:
    Divide the tofu cubes and bean sprouts between the warmed soup dishes. Pour the hot soup over the top. Garnish with coriander.
