Shakshuka with Asparagus

Shakshuka is a Mediterranean and Middle Eastern dish that has been cooked for centuries. It is a dish of eggs that are poached in a tomato-herb sauce. Commonly, you find garlic, onions and peppers and spices such as cayenne, cumin, paprika, pepper and nutmeg in the Shakshuka dish. Our special version features asparagus, a healthy green vegetable used frequently in spring and late summer dishes.

Ingredients
  • 1tbsp olive oil
  • 1kg green aspargus
    (cut off lower third, then chop the asparagus into diagonal pieces of 1cm)
  • 2 tins of chopped tomatoes in tomato juice
    (approx. 410g each)
  • 1/2tsp ground cumin
  • 1tsp salt
  • 150g baby spinach
  • 8 eggs
  • a little sea salt
How To

    Step 1
    For the vegetables: Heat oil in a large frying pan. Cook the asparagus for approx. 5 mins. Add the tomatoes, season and simmer for approx. 5 minutes. Add the spinach and stir.

    Step 2
    For the eggs: Using a tablespoon, make 8 holes in the sauce. Crack the eggs one at a time. Slide them carefully into the holes. Cover and leave to get boiled for approx. 12 mins. Then, season the eggs with salt.
