Miso soup is a traditional Japanese soup that consists of dashi stock and soft miso paste. Miso is a fermented type of food that contains many essential vitamins, minerals and beneficial bacteria that help your intestines function well.

Ingredients
  • 4dl water
  • 36g miso paste
  • 30g shiitake mushrooms
  • 20g dried goji berries
  • 100g silken tofu, diced
  • 30g brean sprouts
  • 1/4 bunch coriander, torn into pieces
How To

    Step 1
    For the soup: Boil the water, add the miso paste and stir. Reduce the heat, add the mushrooms and goji berries. Simmer for approx. 5 mins.

    Step 2
    To serve: Divide the tofu cubes and bean sprouts between the warmed soup dishes. Pour the hot soup over the top. Garnish with coriander.
