Huevos Rancheros

This quick and straightforward breakfast meal can spice up your morning routine in a good way. Huevos Rancheros are a delight and provide you with enough energy to overcome almost everything, even the utter lack of motivation to get up on a dreaded Monday.

Ingredients
  • 1tbsp olive oil
  • 1 onion, finely chopped
  • 1 garlic clove, pressed
  • 1 sliced pepper
  • 1 red chilli pepper, deseeded and finely chopped
  • 50g yellow lentils
  • 1 tin of corn, drained
  • 1 tin black beans, drained
  • 1 tin chopped tomatoes (approx. 400g)
  • 1 1/2dl water
  • 1/2tsp salt
  • 1/4tsp paprika
  • 4 eggs
  • 4 wheat tortillas
  • 1 big avocado, sliced
  • 4tbsp crème fraîche
  • 1 lime, rinsed and cut into slices
  • 1/2 bunch of coriander, torn into small slices
How To

    Step 1
    Tomato sauce: Heat oil in a big frying pan. Add onions and garlic and sauté for approx. 3 mins. Add pepper and all other ingredients up until (and including) the water. Season and simmer for approx. 20 mins. Mould 4 holes in the tomato sauce and crack the eggs one after the other into a bowl. Then carefully slide the eggs into the moulds. Cover and let it get solid for approx. 10 mins.

    Step 2
    To serve: Serve eggs and tomato sauce on top of the tortillas. Garnish using the avocado slices, crème fraiche, lime and the coriander pieces. Et voilà, here you have your Huevos Rancheros!
