Gazpacho with Mozzarella Balls

Gazpacho is a traditionally cold soup, which might sound perplexing to some people. Still, it is widely
enjoyed (especially on hot days) and can be found internationally. Gazpacho with Mozzarella balls is
one of our personal favourites due to this recipe being deeply rooted in the heritage of Spanish
cuisine.

Ingredients
  • 200g tomatoes, in pieces
  • 1 cucumber (approx. 400g), in pieces
  • 1 red pepper, in pieces
  • 1 yellow pepper, in pieces
  • 1 onion, in pieces
  • 1 garlic clove, halved
  • 100g bred, in pieces
  • 3dl vegetable bouillon, cold
  • 2tbsp tomato puree
  • 2tbsp olive oil
  • 1 1/2 tsp salt
  • a little pepper
  • 120g mozzarella pearls, drained
  • 1tbsp basil, finely chopped
  • 1tbsp olive oil

    Step 1
    Gazpacho: Puree the tomatoes with all other ingredients. Cover the gazpacho and leave to chill for approx. 1 hour.

    Step 2
    Mozzarella balls and serving: Mix the mozzarella balls with the basil. Serve the gazpacho, top with the mozzarella balls and drizzle with a little oil.
