Ingredients
  • 100g honey
  • 4 eggs
  • 1/2dl soya drink
  • a little salt
  • 200g light spelt flour
  • 100g almonds
  • 100g hazelnuts
  • 150g dried figs
    diced
  • 150g dried apricots
    diced
  • 50g raisins
  • 1 lemon
    (use lemon zest only)
How To

    For the dough:
    Mix honey, eggs, soy drink and salt thoroughly. Then, add the spelt flour and mix. Add the dried fruit, nuts and lemon zest. Transfer the mixture into the prepared baking form.

    To bake:
    Bake the bread for approx. 50 mins in the centre of a preheated oven (180 degrees). Once the 50 mins are over, take out the bread and leave to cool for 10 mins. Then remove the bread from the baking form and leave to cool on a rack.
