Chia seeds are tiny black seeds from the plant Salvia Hispanica and used to be an important food for the Aztecs and Mayans as they believed these seeds were a sustainable source of energy. Indeed, chia seeds are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron and calcium.
Combine the almond milk and pineapple juice, stir in the chia seeds, divide into glasses, refrigerate for approx. 15 mins.

Caramelized pineapple:
Boil the sugar and lemon juice in a pan without stirring it. Reduce the heat and simmer, moving the pan occasionally , until a light brown caramel develops. Add the pineapple, mix and simmer for approx. 1 min. Add in the mint.

To serve:
Put your caramelized pineapple on top of the chia pudding which you arrange in a little glass.
