Baked Salmon with Broccoli

Ingredients
  • 800g romanesco broccoli
  • 4 salmon fillets without skin
    (each approx. 160g), diced into cubes
  • 1tbsp lemon juice
  • 1/4tsp allspice herbs
  • 2 egg yolks
  • 2tbsp orange juice
  • 80g cold butter
    cut into pieces
  • 2tbsp dill
  • 1tbsp salt
  • 3tbsp olive oil
How To

    For the vegetables:
    Cut the romanesco broccoli into thin slices of approx. 5mm with help of a mandolin. Put the slices on a baking tray. Sprinkle some oil and salt on top of the romanesco. Bake in the centre of a preheated oven (220 degrees) for approx. 25 mins.

    For the baked salmon:
    Place the salmon on top of the broccoli. Mix olive oil, lemon juice and the salt and pour it on top of the salmon. Put the tray back in the oven for another 10 mins.

    For the dill zabaglione:
    Mix egg yolks with orange juice in a thin bowl and put in a bain-marie (bowl should not touch the water). Whisk the mixture for about 5 mins. Then step by step add the pieces of butter while continuing to stir until the zabaglione becomes creamy. Remove the bowl and add the dill and pepper, season with salt. Serve the sauce immediately with the baked salmon and romanesco broccoli.
