Ingrédients
  • 150 g Medjool dates
  • 150 g dried apricots
  • 150 g pecan nuts
  • 75 g crystallized ginger
  • 1 small sprig of fresh rosemary
  • 150 g dried cranberries
  • 150 g raisins
  • 150 g suet
  • 150 g plain flour
  • 75 g fresh breadcrumbs
  • 200 ml semi-skimmed milk
  • 1 large free-range egg
  • 1 clementine
  • golden syrup
  • barrel-aged Bourbon
Préparation

    Step 1
    Grease a pudding bowl with butter (bowl of approximately 1.5L)

    Destone the dates and finely chop the dates, apricots, pecans, rosemary leaves and ginger. Put all in a mixing bowl with the raisins, suet, flour, cranberries, breadcrumbs and milk. Crack in an egg and finely grate the clementine zest into it. Squeeze in the clementine juice and mix it all together.

    Pour the mixture into the greased bowl and cover it with a fine layer of grease proof paper and a double layer of tin foil. Secure the bowl with string to make it watertight. Afterwards, put it in a large deep saucepan and pour in enough water to cover the bowl halfway.

    Bring the water to a boil and cover the pan with a fitting lid. After bringing it to boil reduce the heat to simmer for 4 hours. Check regularly on the water and keep topping it up with boiling water if necessary.

    After 4 hours, take out the bowl and remove the foil and paper. Then, carefully turn the pudding out on a plate or leave it to cool. You can reheat it if you do not serve it immediately.

    You can drizzle all kinds of flammables over the pudding, however, we advise you to use a swig of Bourbon and some golden syrup which are best heated up before igniting. Once ignited, pour it over the pudding and let your friends and family cheer you on as the greatest chef that they know!
