Fish and Chips

Fish and Chips is a traditional British dish that consists of hot battered fish and fries. What many people don’t know is that Fish and Chips is a fusion dish that combines Jewish fried fish and Belgian fried potatoes. It can be considered as a kind of Street Food due to its simplicity and short preparation time.

Ingrédients
  • 100g white flour
  • 1tsp salt
  • 1 1/2dl beer
  • 2 egg whites
  • a sprinkle of salt
  • 600g potatoes, cut into sticks
  • enough oil to deep fry the chips
  • 3/4tsp salt
  • 500g Royal cod fillets (MSC), cut into 4 slices
  • 1/4tsp salt
  • 6tbsp mayonnaise
Préparation

    Step 1
    For the batter: Mix white flour and salt in a bowl. Pour in beer slowly while whisking continuously. Beat the batter until smooth. Cover the batter and let to settle for approx. 30 mins. Before frying, beat the egg whites with the salt until stiff and add carefully to the batter and mix.

    Step 2
    For the chips: Rinse potato sticks and dry them. Fill a pot 1/3 with oil and heat up to approx. 145 degrees. Add the potato sticks for approx. 2 mins. Remove, leave to cool down on a rack with paper towels so the oil can sicker through. Increase the heat until the hot oil reaches 180 degrees. Then deep fry the potatoes for approx. 2 1/2 mins until they are golden. Remove the potatoes and salt them.

    Step 3
    To deep-fry the fish: Salt fish and dip into batter (pieces of fish). Let excess batter drip off and deep fry for approx. 4 mins. until the pieces are golden. Turn occasionally. Remove and drain on paper towels. Serve with the chips and mayonnaise.
