Green Spring Wraps by Gordon Ramsay

Nonetheless, for people who lived under a rock for the last decade: Gordon Ramsay is one of the most accomplished and internationally well-known chefs of the 21st century. This multi-Michelin starred chef owns an array of establishments all over the world. He has on top of that conquered one of the most sought-after careers in the entertainment business whilst rejuvenating the art of cooking for everyone to see. His blending of professional cuisine and his outright fascinating personality have granted him a status as a living legend. He is obviously been bestowed with a plethora of awards, has sold millions of books, founded and supported all kinds of charities, and has brought excitement and fun not only into the kitchen, but into the living rooms of everyday families. We are going to introduce you to one of his delicious recipes – the Green Spring Wraps. They are so easy, even if you are not a professional cook you will be able to make them!

Ingrédients
  • 8 large, outer spring green leaves
  • 200g hummus
  • 2 carrots
  • 1/4 small red cabbage
  • 1 ripe avocado
  • 1 punnet of salad cress
  • 4tbsp tahini
  • 1tbsp soy sauce
  • 2tsp maple syrup or runny honey
  • juice of 1 lime
  • a little sea salt
  • a little ground pepper

    Step 1
    For the dip sauce start with mixing all the ingredients from tahini to sea salt and pepper together in a bowl. Then add warm water 1 teaspoon at a time, mixing after each addition until you reach a drizzling/ dipping consistency.

    Heat a medium frying pan three-quarters full of hot water and bring to a simmer. Cut the woody stem from the very bottom of each spring green leaf, leaving as much of the leaf as possible intact. Dip each leaf, one at a time, into the hot water for 10 seconds or until wilted and bright green in colour. Remove and leave to one side.

    Spread the leaves out on a board. Divide the houmous between the leaves and spread it out.

    Arrange alittle grated carrot, shredded red cabbage, sliced avocado and cress in the middle of each leaf. Drizzle each pile of vegetables with a little dressing, then fold the sides of the leaves inwards over the filling and roll up from the bottom, enclosing the mixture completely.

    Place the wraps, edge side down, on a board and slice them diagonally through the middle, then serve with the dipping sauce in a bowl on the side.

    Tip:
    How to soften cabbage leaves if you don’t have time to blanche them: just put them in the microwave for about 10-12 seconds.
