Raclette Toasties

Raclette is one of those cheeses that smell so good that you put it in your mouth just to realize that it is scorching hot, and yet decide to not spit it out. You can eat Raclette either with potatoes or with bread – to be more precise, toasted bread. This recipe will show you how to make some tasty raclette toasties.

Ingredients
  • 1tbsp olive oil
  • 250g squash (butternut), diced
  • 2 spring onions
    including the green parts, cut into rings and the green part set aside
  • 1/2tsp salt
  • 1/2tsp caraway seeds
  • 1dl apple juice
  • 8 slices of bread
  • 1tbsp coarse-grain mustard
  • 200g raclette cheese with pepper
How To
  • 1
    Step 1
    Heat oil in a pan. Sauté squash and onions together for approx. 5 mins, then season. Add apple juice and bring to boil for a brief time.  Put slices of bread on a baking tray (put baking paper beneath) and put some juice on the slices of bread, then brush some mustard on them. Place cheese and squash on top of the bread slices. Bake for approx. 15 mins in the upper half of the preheated oven (200 degrees). Take out the raclette toasties and sprinkle with the green part of the spring onions that were put aside.
