Lentil Soup with Apple and Ginger

There is nothing healthier, than a lentil soup with apple and ginger. This is a completely biased statement, and I am completely aware of its scientific inaccuracies in terms of validity. But even though I am no doctor, I am very confident about the correctness of this statement in terms of “I just
know it”. An apple a day keeps the doctor away after all and lentils and ginger are already considered super foods in their own aspects. So according to my middle school level of math, a mixture of all these ingredients just has to add up to “most healthy”.

Ingredients
  • 30g ginger
  • 2 shallots
  • 2 garlic cloves
  • 350g red lentils
  • 3tbsp olive oil
  • 1.2L vegetable broth
  • 4dl coconut milk
  • 2tbsp liquid honey
  • a little salt and pepper
  • 1 bunch of coriander
  • 2 apples
How To

    Step 1
    For the soup: Cut the ginger, shallots and garlic into thin slices. Heat oil in a big pot and steam the lentils with the sliced ingredients for approx. 2 mins. Then, add the stock and coconut milk, cover and simmer for approx. 20 mins until soft. Add honey and puree the soup. Season the soup as you wish. Chop the coriander and add to the soup.

    To serve: Dice the apples and add on top of the soup, enjoy!
