Vegan Birchermuesli

Birchermuesli (Birchermüsli) is a traditional Swiss breakfast dish that consists of oats, milk and various fruits. There is no limit to the creativity of what can be added to the dish. Often you will find maple syrup, honey, chocolate drops, nuts, raisins, etc. in it. What always remains the same is the base; the oats are always soaked in milk for at least 8 hours.

  • 180g whole-grain oats
  • 1 grated apple
  • 2 1/2dl almond milk
  • 200g natural soya yogurts
  • 25g raisins
  • 1tbsp chopped walnuts
  • 2tbsp flaked almonds
  • 1tbsp cane sugar
  • 1tbsp maple syrup
  • 1tbsp orange juice
  • 50g raspberries
  • 50g blueberries
  • 50g strawberries
  • 1 sliced banana
  • 50g pomegranate seeds
  • 1tsp coconut flake
  • 1tsp chia seeds
  • 1tbsp chopped, mixed nuts

    Step 1
    For the vegan birchermuesli: Mix all the ingredients listed under “for the muesli” and cover the bowl. Put in the refrigerator over night.

    Step 2
    For the toppings: Once you take the muesli out of the refrigerator, serve the muesli in small bowls. Then, put all the fruits, nuts and seeds on the top to decorate it. Et voilà!
